Step 1

Wash the apples, cut them in half, and core them. Line a baking sheet with parchment paper and place the apple halves on it. Bake the apples in a preheated oven at 120 degrees Celsius (250 degrees Fahrenheit) for 2 hours. If your apples start to burn, reduce the temperature.

Step 2

Peel the apples and mix them with 500 g of sugar. Mix everything together and puree using an immersion blender.

Step 3

Cover the container with puree with cling film and put it in the refrigerator until it cools completely.

Step 4

Add the cold egg whites to the puree and beat with a mixer. It's important to do this at high speed so the mixture whips well, increases in volume, and becomes lighter in color.

Step 5

Mix water with agar-agar and 270 g of sugar. Place the syrup over the heat and cook until it reaches 110 degrees Celsius. Stir occasionally to prevent burning.

Step 6

Add the hot syrup to the apple mixture in a thin stream, continuing to beat with a mixer.

Step 7

Line a baking sheet with cling film. Pour the mixture onto it and smooth it out. Let the pastila set at room temperature for 6-8 hours.

Step 8

Lightly dust the pastila with powdered sugar and cut into bars. Then, take each piece and roll it in powdered sugar. Next, bake the pastila in the oven at 160 degrees Celsius (325 degrees Fahrenheit) until a dense, dry crust forms.
