This super-easy-to-make pancake cake with sour cream will become your favorite dessert, as it's quick and easy to make using ingredients you already have in your refrigerator.
To make a pancake cake at home we will need:
- pan for baking pancakes;
- deep container for kneading dough and whipping cream;
- mixer or whisk;
- sieve for sifting flour;
- spatula or spoon for spreading pancakes.

Step 1. Prepare the cream.
Pour 800 grams of chilled sour cream into a deep bowl and beat with a mixer at low speed for 1 minute. While continuing to beat, add the sour cream thickener, vanilla sugar, and then the powdered sugar and beat for another 1-2 minutes.
Cover the resulting cream with cling film and put it in the refrigerator while preparing the pancakes.
Step 2. Prepare classic pancakes with milk.
Pour 0.5 liters of milk into a deep container and add:
- 2 eggs;
- 2 tablespoons of sugar;
- a pinch of salt;
- 8-10 grams of vanilla sugar.
Beat everything until smooth.
In a separate container, sift 200 g of flour and mix with 1 tablespoon of cornstarch.
Carefully pour half of the milk mixture into the flour and mix with a mixer until smooth.
Add the second half of the milk mixture to the dough and beat again until smooth.
Add 2 tablespoons of melted butter to the dough and mix thoroughly again.
Fry the pancakes in a frying pan, pouring the batter in a thin layer and carefully turning them over with a spatula.
Each pancake must be baked on both sides until golden brown, as shown in the photo.
Stack the pancakes and let cool slightly.
Step 3. Assembling the pancake cake.
Place the first pancake in a bowl of a suitable diameter and spread it with sour cream.
Repeat the procedure the required number of times, forming a cake from pancakes, spreading each layer with whipped sour cream.
Decorate the cake with strawberries, cherries, plums or any other fruits and berries you have.
This unusual cake, made with your own hands, needs to be kept in the refrigerator for 1 hour, and then it can be served to guests.
