To make the brownies, crack the eggs into a bowl and add salt. Then beat them with a mixer for just a few seconds until smooth.
At this stage, it doesn’t matter whether the eggs are from the refrigerator or at room temperature.
Next, gradually add sugar to the eggs and continue mixing with a mixer for a couple more minutes until the sugar dissolves.
Add the chocolate chunks to the well-heated butter. Wait a couple of minutes for the chocolate to melt, then stir with a spatula until the mixture is smooth.
Let the chocolate glaze cool slightly, then add it to the eggs. Mix everything with a mixer for a couple of minutes.
Sift flour into the resulting mixture and mix thoroughly. The resulting dough should be fairly runny.
Pour the dough into a pre-prepared pan and bake in an oven preheated to 180 degrees for 25 minutes.
Remove the finished cake; it will have a crust, but the inside should still be moist. Let the brownie cool while you prepare the caramel.
Pour the sugar into a heavy-bottomed saucepan and set it over medium heat. Don't stir the sugar with a spatula, just gently shake the pan. Once most of the sugar has dissolved, gently stir with a silicone spatula and cook the caramel until it turns an amber color.
Remove the finished caramel from the heat and immediately add the butter, mixing thoroughly. Next, add the hot milk and a pinch of salt, and mix thoroughly again.
Add walnuts to the resulting caramel and mix everything together.
Carefully remove the brownies from the pan and transfer them to a plate. Next, spread the caramel and nuts on top and spread them evenly.
It turns out to be a very tasty and moderately sweet dessert.
Adviсe
- You can add a little coffee to the dough and then you will get an interesting chocolate-coffee flavor.
- If your caramel turns flaky, you can simply puree it with a blender. This will give it a more delicate consistency and flavor.
- Prepare your pan in advance. You can use a silicone pan, a regular springform pan with foil on the bottom, or any other pan lined with parchment paper and greased with oil.
- The larger the diameter of your pan, the less baking time it will require.
What does this dessert go with?
Today we looked at a recipe with caramel and walnuts. In addition to the latter, you can also use hazelnut, peanuts, or almonds, which will also complement the chocolate flavor perfectly. Various types of ice cream also pair well with brownies: vanilla, pistachio, berry, and others. And adding fresh berries and fruit will add a fresh touch to the dessert.
