Sweet candied fruits can be made from both orange and lemon peels.
Before you begin cooking, citrus fruits must be washed thoroughly, as the peel may be treated with special compounds.
We cut the peel crosswise without damaging the segments, and also cut off the top and bottom caps, and peel each orange, as in the photo.
To make candied fruit, we need a peel with an orange skin and a white base (no need to cut it off), but if there are a lot of white threads-veins on the inside, you can simply remove them with your hands.
You can remove the bitterness found in orange peels by simply soaking them. To do this, soak the peels in cold water (unboiled water is fine) for 24 hours. Change the water 3-4 times over 24 hours.
After a day, the peel, which has swollen well and completely lost its bitterness, is cut into strips.
Blanch the fragrant orange strips. To do this, pour boiling water over the peel and let it sit for 10-15 minutes. Then drain the water and repeat the process a second time.
Add 700 grams of water, 700 grams of sugar, spices and lemon juice to the container.
Add the orange peels to the heated syrup. Bring to a boil, then reduce the heat and continue cooking, stirring constantly. Cook the candied orange peels until the liquid has completely evaporated. This process is not quick and may take 1.5-2 hours, depending on your cookware and stovetop, as well as the number of peels.
As a result, after boiling, you should have beautiful, translucent, soft, elastic and very aromatic candied fruits, as in the photo.
Place the still-warm peels on a wire rack. To dry our candied peels, you'll need:
- 1-2 days at room temperature;
- 2-3 hours in the oven at 40-50℃;
- even less time when using a dehydrator or dryer.
Roll the finished candied fruits in powdered sugar to prevent them from sticking together during storage.
Store candied peels in the refrigerator, placing them in tightly sealed plastic containers or glass jars. Using this quick recipe, you can make candied orange peels at home, which will last for up to 6 months, perfect for making a variety of desserts and baked goods.
