Yeast Pumpkin Pie

I don't know everything, but a gorgeous pumpkin pie can be made with airy yeast dough. I offer you a simple recipe for this dessert. The soft and fluffy yeast dough pairs perfectly with the sweet pumpkin filling. This baked good turns out golden brown, beautiful, and incredibly delicious.

  • Kefir 1%
    200 ml
  • Egg yolk
    3 pcs
  • Sugar
    100 G
  • Dry yeast
    11 G
  • Salt
    3 G
  • Water
    100 ml
  • Vegetable oil
    80 ml
  • Flour
    530 G
For the filling:
  • Pumpkin
    500 G
  • Water
    25 ml
  • Raisin
    100 G
  • Sugar
    3 tbsp
Preparation

Step 1

Prepare the ingredients for the filling.

Step 2

Peel the pumpkin and cut into small cubes.

Step 3

Place the pumpkin pieces in a heavy-bottomed saucepan, cover with water, and set over medium heat. Once boiling, reduce the heat to low and simmer for 15 minutes.

Step 4

Add raisins and sugar to the pumpkin, mix everything and cook the resulting mixture for a few more minutes until the sugar is completely dissolved.

Step 5

Then remove the pan from the heat and cool the filling.

Step 6

Prepare the ingredients for the dough.

Step 7

Pour warm water into a small container, add 1 tbsp. sugar and yeast.

Step 8

Mix everything well and leave for the yeast to react.

Step 9

In a separate bowl, beat the yolks with sugar.

Step 10

Pour in kefir, add salt and mix until smooth.

Step 11

Add yeast to the resulting mixture.

Step 12

Add flour in several additions, stirring each time until smooth.

Step 13

When the mixture becomes homogeneous, pour in the vegetable oil and mix everything again.

Step 14

Sprinkle the table or a special board with flour and knead the dough.

Step 15

Place the dough in a bowl and cover with a towel.

We leave it in a warm place for 1 hour.

When the dough has risen, knead it lightly again.

It is important to be careful not to score.

Step 19

Divide the dough into two parts and roll each to a thickness of 1 centimeter.

Place one part of the rolled out dough onto a baking sheet lined with parchment paper.

We spread the cooled pumpkin filling on it.

Step 22

Cover the top with the remaining dough.

Step 23

Decorate the pie to your taste.

Brush with egg until nicely browned.

Step 25

Bake the pie at 180 degrees for 35 minutes.

Step 26

Soft, fluffy and extremely delicious pumpkin pie is ready.
