We weigh and prepare the ingredients for the recipe. Wash all the fruit.
Peel the apples. Peel and core them. Cut the fruit into medium-sized pieces. Immediately squeeze lemon juice over them to prevent them from browning. Stir.
Grate the zest of one orange and half a lemon over a portion of jam. Mix it with saffron. It will not only add new notes to the flavor of the jam but also add a hint of color.
Peel the oranges, then scoop out the pulp, removing the thick membranes. Then slice the orange segments and add them to the apples.
Sprinkle the fruit with sugar. Stir, being careful not to damage the pieces, and set aside for a couple of hours to release their juices.
Bring the apples and oranges to a boil in a saucepan and cook for 3 minutes. Let cool completely. Repeat.
Grind the mixture, cooled for the second time, with an immersion blender.
Place a cinnamon stick in the bowl.
Return the jam to the stovetop, bring to a boil, and then let it simmer for 5 minutes. Remove the cinnamon stick and pour into sterilized jars for long-term storage.
