Apple jam with cinnamon

Green and sour apples are best for jam. They impart a more interesting and rich flavor to the preserves. Green apples also contain more pectin, which, when combined with natural acids and sugar, produces the most effective jam.

Prepare and wash the apples.
Peel the apples and remove the cores. Then cut them into pieces.
Bake the apples in the oven at 180 degrees Celsius for about 25 minutes, until soft. Then gradually puree the fruit using an immersion blender.
Pour the applesauce into a saucepan, add sugar, and simmer on the stove, stirring constantly. Bring to a boil and simmer for about 40 minutes.
When the puree darkens, add ground cinnamon.
Continue cooking the jam until it's ready. You can test the dessert by dropping a drop of the apple mixture onto a plate. If it holds its shape when you tilt the plate, the jam is ready. You can pour it into sterilized jars.
