We begin preparing the dough for our pear pie by sifting the flour. Roll an ice-cold block of butter in the flour and grate it.
The butter can be grated directly into the flour using a fine grater or simply beaten together with the flour in a chopper.
The result is a dry, buttery, floury crumb, like the one in the photo.
Add salt, sugar and 10 tablespoons of ice water to the dry mixture.
Knead the dough quickly so that the butter does not melt from contact with your hands.
Wrap the finished dough ball in cling film (or a bag) and place in the refrigerator for 30-40 minutes.
Take the well-chilled dough out and roll it out into a thin crust 0.5 cm thick, as in the photo.
Wash the pears, dry them and cut them into thin slices with the skin on.
Sprinkle with Dor Blue cheese.
We fold the edge of the galette, forming a traditional pie shape.
Brush the edge of the dough with egg to create a nice golden brown crust.
Before serving, you can drizzle a portion of the pie with natural honey.
