Step 1 – preparing shortcrust pastry.
Sift the flour and add a pinch of salt, vanilla sugar, and 3 tablespoons of regular sugar. Stir the dry mixture until smooth.
Grate the well-chilled butter on a coarse grater.
Making butter shavings can require some skill. You can simply mix the grated butter thoroughly with flour by hand, or you can periodically dip the block into the flour as you grate.
As a result, you should get dry oil shavings of a fine fraction, as in the photo.
Add 3 tablespoons of ice water and knead the dough with your hands until it becomes soft and elastic.
Wrap the finished ball of dough in cling film and place in the refrigerator for 40-60 minutes.
Step 2 – preparing the filling.
Wash the fragrant fruit, dry it with a paper towel, remove the pit, and cut the flesh into large wedges. Peeling the skin is optional, as it will give the dish a more attractive appearance.
In a small bowl, combine 1.5 tablespoons of sugar and 1 tablespoon of cornstarch. This mixture will add sweetness to the pie and help retain the moisture that will be released from the peaches during baking.
Coat the sliced peaches thoroughly with the sugar-starch mixture.
Step 3 – forming the pie.
We take the cooled shortcrust pastry out of the refrigerator and roll it out immediately on baking parchment into a layer 3-4 mm thick.
Place the filling in the center of the dough.
We fold the edge over and pinch it slightly so that our peach galette acquires the classic look typical of the dish.
Sprinkle the edge of the pie with additional sugar.
