Step 1 – prepare the curd dough.
In a mixing bowl, combine 150 grams of cottage cheese of any fat content, a pinch of salt and 70 grams of softened butter.
Grind the ingredients thoroughly until you get a homogeneous curd mass.
Add 5 grams of vanilla sugar (1 teaspoon) to the curd mass, pour in 150 grams of sifted flour, and knead the dough.
Step 2 – prepare the cherry filling.
Wash fresh cherries, remove pits and sprinkle with the mixture:
- 2-3 spoons of sugar;
- 5 grams of vanilla sugar;
- 1 tablespoon of starch.
Step 3 – forming the pie.
It's best to roll out the dough directly onto the baking surface you'll be using. This could be parchment paper or, like ours, a silicone mat.
The diameter of the cake should be larger than the diameter of the roasting pan, since we will be folding the edges of the galette, creating its classic look.
Place the cherries in the center of the cake and spread them out in an even layer.
We fold the edges of the dough, forming the characteristic rim of a French galette.
Grease the edge with egg yolk.
Step 4 – Baking the cherry galette.
French pie must be baked at 200℃ for 18-20 minutes (Cooking time in your oven may vary depending on individual characteristics and the selected operating mode).
As a result, the edges of the galette should be browned, as in the photo.
