Today, in French cookbooks, you can find a wide variety of recipes for such pies:

  • berry galette (cherry, strawberry, raspberry, etc.);
  • fruit tart (peaches, apricots, apples, pears, etc.);
  • Salty variations with meat, hard or soft cheese, cottage cheese and mushrooms.

Preparation

Step 1

Step 1 – prepare the curd dough.

In a mixing bowl, combine 150 grams of cottage cheese of any fat content, a pinch of salt and 70 grams of softened butter.

Step 2

Grind the ingredients thoroughly until you get a homogeneous curd mass.

Step 3

Add 5 grams of vanilla sugar (1 teaspoon) to the curd mass, pour in 150 grams of sifted flour, and knead the dough.

Once the dough has formed into a ball, you can wrap it in plastic wrap and let it rest in the refrigerator for 5-6 hours to make the baked goods even fluffier and more flaky. If you don't have time to rest, you can use the freshly made puff pastry directly to make the pie.

Step 2 – prepare the cherry filling.

Wash fresh cherries, remove pits and sprinkle with the mixture:

  • 2-3 spoons of sugar;
  • 5 grams of vanilla sugar;
  • 1 tablespoon of starch.
Use cornstarch, as it won't affect the taste of the product; it will simply bind the liquid released by the berries during baking.
If you plan to make a galette from frozen berries stored for the winter, use seedless berries and do not defrost the berries before placing them on the dough.

Step 3 – forming the pie.

It's best to roll out the dough directly onto the baking surface you'll be using. This could be parchment paper or, like ours, a silicone mat.

The diameter of the cake should be larger than the diameter of the roasting pan, since we will be folding the edges of the galette, creating its classic look.

Place the cherries in the center of the cake and spread them out in an even layer.

We fold the edges of the dough, forming the characteristic rim of a French galette.

Step 8

Grease the edge with egg yolk.

If desired, you can sprinkle the edge with white or black sesame seeds, nuts or almond petals.

Step 4 – Baking the cherry galette.

French pie must be baked at 200℃ for 18-20 minutes (Cooking time in your oven may vary depending on individual characteristics and the selected operating mode).

As a result, the edges of the galette should be browned, as in the photo.

You can serve this French-style cherry pie garnished with mint leaves, sour cream, or whipped cream. However, keep in mind that this additional ingredient will significantly increase the dessert's already substantial calorie content.

There are also lean, dietary French galettes for those who adhere to a healthy diet, diabetics, and those with gluten intolerance. These recipes typically do not include butter, eggs, or wheat flour (alternative ingredients for healthy dough are always available at the VkusVill specialty store).
