Fluffy, deep-fried pretzels are featured in cuisines around the world:

We will be making classic yeast хворост using "live" yeast, but you can slightly modify the recipe and use dry, highly active yeast.

We begin preparing the yeast хворост by making the starter. To do this, dissolve 12 grams of live (wet) yeast and 1 teaspoon of sugar in 160 ml of warm (not hot!) milk.
In a mixing bowl, combine 80 grams of sugar, 60 grams of melted butter, 1 egg (white + yolk), a pinch of salt and 3 drops of vanilla extract.
Beat everything into a homogeneous mass.
Add the yeast dough to the egg mixture and mix thoroughly until smooth.
Add flour in parts and knead the dough.
First, knead the dough with a spatula, and then with your hands at the final stage, forming an elastic, homogeneous lump, as in the photo.
Cover the bowl with the dough with cling film and place in a warm place for 1 hour.
During this time, the yeast dough will increase significantly in volume and acquire a characteristic porous texture.
Place the dough on the surface and knead again, adding a small amount of flour.
We roll out a fairly thick cake, because our yeast pretzels should be fluffy.
Cut the dough into diamond shapes. The diamonds can be larger or smaller, depending on the desired size of the finished pretzel.
In the center of each diamond, make a small longitudinal cut and turn a corner of the dough through it, forming the classic shape of a brushwood.
Heat vegetable oil in a deep frying pan and fry the brushwood first on one side, then on the other, until a nice golden crust forms.
Remove the finished pretzels onto paper towels to drain off excess oil.
Before serving, sprinkle the brushwood with powdered sugar.
