- sour milk (yogurt);
- kefir of any fat content;
- sour cream;
- neutral yogurt;
- with milk (with baking powder).
Preparing soft and fluffy хворост (brushwood) with sour milk is very easy, so even a novice cook is guaranteed to succeed with this delicacy.

In a mixing bowl, mix 1 egg (white and yolk) and 3 tablespoons of sugar with a fork.
Add 150 ml of sour milk (yogurt) to the egg mixture and mix until smooth.
Add a pinch of salt and 2 tablespoons of refined vegetable oil.
Mix 0.5 teaspoon of baking soda with a small amount of flour and pour into the liquid mixture, stirring until smooth.
Add the remaining amount of flour and knead into a soft dough.
Knead the dough again and divide it into portions. Roll each portion out into a 5 mm thick crust and cut into pieces to form the crabs.
To form the хворост, cut the dough into 10x10 cm squares. Make a slit in the center and turn one corner through it. You'll get beautiful хворост (knobs), like the ones in the photo.
Heat vegetable oil in a deep frying pan or saucepan (there should be enough oil so that the brushwood floats in it).
It is better to first place the finished brushwood on a paper towel to remove excess fat.
Sprinkle the finished dish with powdered sugar.
The only downside to this dish is its high calorie and fat content. If you don't like deep-fried dough or want to reduce the calorie content of khvorost, try frying it in an air fryer with minimal oil or baking it in the oven. The result will be different from the traditional version, but it will be no less delicious.
