Today, this delicacy is known and loved in many countries around the world, but they call it by their own names: verguny, sochen, sush, urama, sangaza.
Recipes for the dough itself also vary. You can make хворост at home:
- on eggs with vodka (it turns out to be extremely crispy);
- with milk (if you like a fluffy, not tough version);
- on yeast (to achieve maximum growth and volume during the frying process);
- with sour milk or kefir and soda.
The preparation of brushwood itself can also vary. Depending on availability, you can choose from the following options:
- deep frying;
- frying in a pan with a large amount of oil;
- immersion in a saucepan with heated vegetable oil.

In a mixing bowl, break 2 eggs (use the yolk and white), add 50 grams of sugar (+ a packet of vanilla sugar) and mix with a whisk until smooth.
Add half a teaspoon of salt.
Add 150 ml of milk of any fat content and mix the ingredients until smooth.
Add 50 grams of melted butter and whisk the mixture again.
Add pre-sifted flour mixed with baking powder.
At the final stage, we finish kneading the dough with our hands, achieving elasticity and homogeneity.
You should get a smooth, elastic dough, as in the photo.
After 30 minutes, place the finished dough on a mat covered with vegetable oil and begin rolling it out.
Remember, the thinner you roll the dough, the crispier the treat will be. Try different variations to see which хворост suits you and your family's taste best.
To do this, first cut the rolled out dough into rectangular strips.
Then we make slits in the center of each rectangle, as in the photo.
To give the cookies their characteristic shape, simply fold one side of the cookie over the cut in the center 1-2 times.
We'll fry the хворост in a frying pan. Use enough oil to completely submerge the dough.
Fry the хворост in batches, ensuring each piece of dough is submerged in the oil. Cook until golden brown (cooking time may vary depending on the thickness of the dough and the temperature of the oil).
Place the finished brushwood on a plate and sprinkle with sugar or powdered sugar.
