It is not known for certain which recipe for crispy brushwood was invented by the Greeks in the 18th century, but today there are many different recipes for this delicacy, beloved in many countries around the world.

By following the recommendations in our simple step-by-step recipe, you can prepare this wonderful treat, even if you have never worked with dough or baked goods before.

Let's start making our sour cream khvorost with eggs. Crack two eggs into a mixing bowl (use the yolks and whites) and add salt.
Add 3 tablespoons of sugar and beat with a whisk until smooth.
Add 250 grams of sour cream at room temperature to the egg mixture and mix thoroughly again.
Sift half of the required amount of flour into a bowl and add 10 grams of baking powder.
Knead the soft dough with your hands.
When the dough becomes homogeneous, add 20 grams of softened butter and continue kneading until the mixture becomes homogeneous.
Add the remaining flour and knead a thick dough that can be rolled out.
The dough should be smooth and elastic, as in the photo (it’s okay if the dough is slightly sticky).
Roll out the dough on a floured surface into a layer 4 mm thick.
Cut the sheet into strips 4.5-5 cm wide.
Next, we make strips of the same width, but diagonally, getting beautiful diamonds, from which we will form the crébli.
In the center of each diamond, make a small longitudinal cut with a knife, as shown in the photo.
We form a classic хворост (brushwood) by passing one corner of the dough through the slit and turning it inside out.
Heat vegetable oil in a frying pan.
Fry the brushwood in oil on both sides until golden brown (approximately 1-2 minutes on each side).
Place the finished хворост on a napkin to remove excess oil, then place it on a plate and sprinkle with powdered sugar.
