This delicious dish, familiar to every Russian since childhood, was invented in Greece around the end of the 18th century. In Greece, "Crispy Brushwood" is called "Dipless" and is prepared as sweet, cigar-shaped tubes, rolled from thin sheets of dough and deep-fried.

The dish is also popular in other countries. These delicious, crispy sweets are common in many European and Eastern countries, but each country has its own name (sush, sochen, verguny, sangaza, urama, chak-chak, etc.) and prepares them with some national peculiarities in the recipe or presentation.

In Russia, the most popular recipe, which gained incredible popularity back in the Soviet era, is the classic crispy хворост (brushwood) with vodka.

Unlike other recipes (with milkWhile khvorost (made with kefir or sour cream) has a fluffier texture, thin khvorost made with vodka is very tender, brittle, and crispy. The dough is kneaded without yeast or baking soda, and the vodka, a necessary ingredient in the recipe, creates the voluminous, bubbly, and layered effect.

Please note that the traditional recipe does not include sugar. Powdered sugar adds sweetness. You can also soak the brushwood in honey or sugar syrup.

There are different ways to fry the dough:

  • in a deep frying pan;
  • in a saucepan;
  • in a modern deep fryer.

To make classic crispy хворост at home, you don't need any special equipment, and the entire process takes no more than half an hour.

First, mix the dough with a fork, and then knead it well with your hands, achieving maximum elasticity.

Vary the amount of flour depending on the volume of the liquid component. The key is to achieve a dense yet elastic dough that rolls out easily.
Step 4

Divide the dough into two parts to make it easier to work with, and begin rolling it out on a floured surface.

It is important to roll out the dough into a very thin (almost transparent) layer so that the хворост turns out as crispy as possible.

Don't be lazy when rolling it out! If the dough is too thick, the eggs and vodka will make it tough and the crisps won't be as tasty.
