The dish is also popular in other countries. These delicious, crispy sweets are common in many European and Eastern countries, but each country has its own name (sush, sochen, verguny, sangaza, urama, chak-chak, etc.) and prepares them with some national peculiarities in the recipe or presentation.
Unlike other recipes (with milkWhile khvorost (made with kefir or sour cream) has a fluffier texture, thin khvorost made with vodka is very tender, brittle, and crispy. The dough is kneaded without yeast or baking soda, and the vodka, a necessary ingredient in the recipe, creates the voluminous, bubbly, and layered effect.
There are different ways to fry the dough:
- in a deep frying pan;
- in a saucepan;
- in a modern deep fryer.
To make classic crispy хворост at home, you don't need any special equipment, and the entire process takes no more than half an hour.

Let's start preparing our delicious crispy хворост (fine brushwood) with the egg mixture. Place two eggs (yolk and white) in a bowl, add a pinch of salt, and beat with a fork or whisk until smooth.
Add 1 tablespoon of vodka and begin to gradually introduce the pre-sifted flour, kneading the dough.
First, mix the dough with a fork, and then knead it well with your hands, achieving maximum elasticity.
Divide the dough into two parts to make it easier to work with, and begin rolling it out on a floured surface.
It is important to roll out the dough into a very thin (almost transparent) layer so that the хворост turns out as crispy as possible.
Using a decorative knife, cut the cake into long strips, and then into diamonds.
We make a small additional cut in the center of each diamond in the direction from corner to corner.
We wrap each diamond corner into the cut, creating a classic-shaped brushwood.
Fry the brushwood in batches in well-heated vegetable oil until golden brown.
First, place the finished “crisps” on thick paper napkins to remove excess oil, and after a couple of minutes, transfer them to a plate.
Before serving, sprinkle the brushwood generously with powdered sugar.
