Cut the apples into small pieces.
Cook the apples using any method you prefer until they're soft. The easiest way is to microwave them for 1.5 minutes.
Place soft apples, cottage cheese and egg into a blender bowl.
Melt the honey and add baking soda.
Mix well.
Cool the honey mixture slightly and add to the other ingredients.
Turn on the blender and beat the mixture until smooth.
Add the sugar substitute, spices and mix everything thoroughly.
Pour the resulting mass into a deep bowl.
Mix everything carefully until smooth.
Add corn flour and knead into a soft, elastic dough.
Wrap the dough in cling film and put it in the refrigerator for 30-40 minutes.
We take the dough out of the refrigerator.
We roll it out and cut out cookies.
Place the gingerbread cookies on a baking sheet lined with baking paper.
And bake for 15-18 minutes at 175 degrees.
After baking, cool the gingerbread cookies and decorate them with icing.
