This is a wonderful and very simple recipe for cookies with fresh ginger. To make this dessert, you'll need the simplest, most readily available ingredients. These ginger cookies are incredibly delicious, crispy, and aromatic. They pair perfectly with various teas, coffee drinks, uzvar, and mulled wine.

Prepare all the necessary ingredients. Let the butter soften at room temperature.
Mix sifted flour, baking soda, cinnamon and grated ginger in a deep bowl.
Place soft butter in a separate bowl and add sugar.
Beat the butter and sugar until fluffy.
Once everything is well mixed, stop the blender.
Add eggs one by one to the resulting mixture.
Add honey and mix everything until smooth.
Add the dry ingredient mixture in small portions.
Knead a soft dough.
Cover the dough with plastic wrap and refrigerate for at least an hour. The longer the dough sits in the refrigerator, the more elastic it will be.
Roll out the dough to a thickness of 3-4 mm and cut out different figures from it.
Bake the cookies at 180 degrees for approximately 5-7 minutes.
Remove from the oven and let it cool completely.
