This airy, porous mousse cream can also be used in a variety of desserts. And if you make it with gelatin, you'll get a delicate cake layer that holds its shape well and pairs perfectly with sponge cake layers.

Today we'll show you how to make a delicious yogurt mousse that can be served on its own or used in cakes or desserts.
Our recipe includes step-by-step instructions on how to make a berry yogurt mousse using a mixture of yogurt and cream, and also with the addition of any favorite berries (the berries can be either fresh or frozen).

Let's start making our yogurt mousse for the cake by preparing the gelatin - our recipe can be made using either sheet gelatin (you'll need 12 sheets) or instant gelatin (20 grams is enough).
Soak gelatin in cold boiled water and let it sit for 5-10 minutes.
Pour 150 ml of water into a saucepan. Add the pureed berries (we used blueberries) and the juice of half a lemon.
Mix everything well, put it on the fire and heat, just not bringing it to a boil.
Add 100 grams of sugar to the hot berry mixture and stir until smooth. This will allow the sugar to dissolve and the mixture to cool slightly.
When the base cools to 70°C, add the swollen gelatin (if using sheet gelatin, squeeze it out thoroughly). Stir until the gelatin is completely dissolved and let cool naturally to room temperature.
Place 500 ml of cream (at least 30% fat) and 2 packets of vanilla sugar into a whipping bowl.
Whip the cream with a mixer until soft peaks form.
Add 500 grams of natural berry yogurt to the cream and lightly beat until smooth.
Gradually add the gelling base prepared earlier into the creamy yogurt mixture.
Continue whisking for a few more minutes until you get a beautiful glossy surface, as in the photo.
For dessert, pour the finished mousse into molds, or if you're making a cake, pour the mousse layer directly onto the sponge cake using acetate film and a molding ring.
The mousse layer requires at least 4 hours to fully set. Therefore, you can move on to making the mirror glaze or jelly layer (as in the main photo) only once the yogurt mousse has completely set.
