The first waffles were made by confectioners as early as medieval Europe. Various variations of crispy waffles were especially popular in Belgium, Germany, France, and Scandinavia. In the 20th century, waffles went from being a stand-alone delicacy to an essential ingredient in various recipes.
Today, the scope of application of wafer crumbs is quite wide, but primarily it is:
- decorative design of cakes and various desserts (used as a sprinkle, as a base for decoration, and also as a sprinkle on the sides);
- making ganache;
- an exquisite crispy layer for cake (used in recipes for Ferrero Rocher, Etude, Merry Bear and many others);
- A crunchy ingredient in a recipe for chocolate candies that you can make at home.
Today, stores sell ready-made crispy cake layers from various domestic and international manufacturers. The most popular is Royaltine (or Feuilletine) crumble, which contains:
- wheat flour;
- coconut oil;
- invert sugar (in the form of syrup);
- concentrated butter;
- malt extract;
- rapeseed lecithin;
- emulsifier;
- Colorings and flavorings may be added.

The ingredients are simple and readily available in any kitchen. Our recipe calls for one egg white, weighing 30 grams. If you find you have slightly more or less egg white, we recommend increasing or decreasing the quantities of the other ingredients accordingly.
Combine softened butter with powdered sugar and beat with a hand whisk until the mixture becomes fluffy and lighter.
Add the egg white and mix vigorously until smooth.
Sift the flour and knead the dough.
After kneading, you should get a soft, elastic, homogeneous mass like the one in the photo.
From the resulting amount of dough, we will get two wafer cakes, so we divide the mixture into two equal parts and apply a thin layer onto the baking base.
You can use:
- oiled parchment;
- silicone paper;
- Baking mats.
Bake each cake in the oven at 160℃ for about 10 minutes (until it’s a nice golden brown, as in the photo).
Immediately remove the wafer paper from the grill to prevent the thin layer from burning. Let the cake cool and separate it from the base.
We crush the finished biscuits by hand.
Pour the finished product into a dry glass jar.
