Step 1

Rinse the cherries in a sink or large basin filled with water until all the twigs and leaves float to the surface. Remove the stems and place them in a bowl.

Take a few cherries at a time and lay them out on a clean cutting board. Ideally, the cherries should be in a single layer, with minimal contact between them.

Step 3

Place the board in the freezer and leave it overnight or for 3 hours if you are preparing the cherries early in the day and don’t have a lot of cherries.

Step 4

Place frozen cherries in bags or containers that can withstand low temperatures.

How to defrost cherries
If you want to defrost cherries, transfer the desired amount to a separate container and leave it on the bottom or middle shelf of the refrigerator. Defrosting will take approximately 12-24 hours, but this is ideal for cherries. This method will preserve the cherries' texture and flavor. Failure to do so will result in the cherries becoming excessively watery and losing much of their juice, and therefore, flavor.
