Blackcurrants for freezing must be ripe, otherwise the skins will burst when thawed, and the berries will leak juice. Along with this juice, all the vitamins preserved during freezing will disappear. Thanks to their dense texture, black, white, and redcurrants can be frozen not only as purees or with added sugar, but also without it.

The main rule is to wash the berries thoroughly and let them dry completely. This way, they'll remain beautiful and whole when thawed.

Shelf life of black currants
In modern freezers, which consistently maintain temperatures between -16 and -18 degrees Celsius (-14 to -18 degrees Fahrenheit) and below, currants can be stored for about nine months without losing their flavor or active ingredients. If your freezer is weak and only cools to -10 degrees Celsius (-14 degrees Fahrenheit), it's best to eat the berries within three months.
Do blackcurrants need to be defrosted?
Frozen berries can be used in almost all recipes. Blackcurrants are quite small. They blend easily in a blender and thaw very quickly in a warm place. If you've done everything correctly, and the individual berries haven't clumped together into a lump of ice, you can leave the blackcurrants there.
