Pour cold water over the gooseberries and let them sit for 2-3 minutes. Then rinse them gently by hand, without pressing too hard to avoid damaging the berries.

Place it on a large kitchen towel and smooth it out to create an even layer. This will speed up the drying time.

Place the gooseberries in freezer-safe bags, filling them halfway.
