Combine softened butter and sugar. Beat with a mixer at medium speed until smooth.
Add medium-sized chicken eggs and beat for another 2–3 minutes until combined.
In a separate bowl, combine the flour and baking powder. Gradually add the dry ingredients to the egg-cream mixture, mixing well.
Add crispy white chocolate or chopped regular chocolate to the dough. Stir until the chocolate is evenly distributed.
Place the batter into cupcake liners. Bake at 180°C (350°F) for 20–25 minutes.
Place the strawberries in a heavy-bottomed saucepan and sprinkle with sugar. Reduce heat to low until simmering. Puree the strawberries with an immersion blender. If the mixture is too runny, dilute the starch with cold water, add it to the berries, and reheat until thickened.
Rub the puree through a sieve to remove seeds and debris.
Beat room temperature butter with powdered sugar for about 5 minutes.
Add cold cream cheese and half of the cooled strawberry filling.
Beat with a mixer until smooth.
Cut out the centers of the cupcakes using a pastry tip.
Fill with strawberry puree and place cream caps using a pastry bag.
