Cupcakes with cream cheese frosting

Cream cheese cupcakes can also be decorated and garnished however you like, as they pair well with almost anything. But the highlight of this dish is its delicate flavor, which is perfectly complemented by the berry filling.

To make cupcakes, place soft butter in a mixer bowl and sift in powdered sugar.
Next, beat everything at high speed for about 3-4 minutes until a light, fluffy mass forms.
Once the butter is whipped, add the egg and continue whisking until the ingredients are combined.
The egg should be at room temperature, so you should take it out of the refrigerator in advance.
In a separate bowl, combine the flour, baking powder, and vanilla sugar. Then gradually add these dry ingredients to the egg-butter mixture and knead the dough, adding a pinch of milk and a pinch of salt as you go.
When the dough is smooth, transfer it to a pastry bag.
Fill cupcake tins with 60g of batter. Then bake in a preheated oven at 180°C (350°F) for approximately 40-50 minutes. Do not open the oven for the first 20 minutes.
To prepare the cream, mix the curd mixture with cream and powdered sugar in a mixer bowl.
The curd mass should be at room temperature, so take it out of the refrigerator 30 minutes before use.
The cream must have a fat content of at least 33% to ensure a smooth cream consistency.
Next, mix the cream with a silicone spatula, transfer it to a pastry bag and put it in the refrigerator until you assemble the cupcakes.
To prepare the filling, dice the strawberries, add sugar, and simmer over medium heat. You can substitute any berries you like.
Boil the strawberries until the sugar melts, then add the cornstarch and continue cooking until thickened. Remove the finished filling from the heat and transfer to another container.
We make holes in the finished cupcakes for the filling. Then we put our strawberry filling in and cover it with a "cap" on top.
Using a piping bag and frosting, we beautifully decorate the tops of our cupcakes. You can decorate them however you like, for example, by adding berries, mint, nuts, or coconut flakes.

Possible replacements

- Replace wheat flour with another type. You can always use coconut, almond, or rice flour, which will give you interesting flavors.
- Curd mixture for cottage cheese. Simply rub the cottage cheese through a sieve or in a blender until it becomes soft.
