Place the softened butter in a bowl and beat until fluffy.
When the butter has thickened and turned white, add the sugar. Beat until the crystals are completely dissolved.
In a separate bowl, combine all dry ingredients for the dough. Mix thoroughly.
Beat the eggs into the beaten butter and sugar. Mix.
Sift the dry ingredients into the beaten mixture. This will help avoid lumps. Knead the dough.
While whisking, add room temperature milk to make the dough elastic.
Fill the cupcake liners halfway. Bake the cupcakes in a preheated oven at 180 degrees Celsius for 20–25 minutes.
For the ganache, pour hot cream over the chocolate and mix thoroughly.
Remove the centers from the cooled cupcakes and fill them with chocolate ganache.
Whip heavy cream in a clean bowl. Avoid using low-fat cream or cream with less than 30% fat, as it won't whip.
Add 200 grams of Mascarpone cheese. Mix with a spatula.
Add powdered sugar and beat with a mixer for 2–3 minutes until smooth.
Transfer the cream into a pastry bag and place the caps on the cupcakes.
