Warm half a glass of milk slightly over a stove or in the microwave. Pour into a clean container.
Add 9% apple cider vinegar to the milk to make the dough fluffy and airy. Stir. Let it sit for 10 minutes until the whey separates from the surface of the milk.
Add melted butter or coconut oil to make the dough elastic.
Vanilla extract or a pinch of vanillin.
Sift the flour through a sieve to eliminate lumps in the dough. Choose your flour of choice. If you're a health conscious person, consider almond, corn, or rice flour.
Sift the powdered sugar, cocoa, and baking powder mixture through a sieve. You can substitute the powdered sugar with a sweetener of your choice, but in that case, add the appropriate amount of flour or cocoa to prevent the dough from becoming too runny.
Mix the dough thoroughly, adding the remaining half of the milk as you go. You should get a thick, elastic dough, similar in consistency to heavy cream. If the mixture is too thick, add a few more tablespoons of milk.
Fill the baking molds with chocolate dough.
Place the cupcakes in the microwave for 10 minutes at 180 ͒C on convection mode.

It works by raising the air temperature and circulating it evenly throughout the oven. Convection allows you to quickly reach the desired temperature and prevent baked goods from burning.
