This recipe is the most classic. It will help you create those same lollipops you remember from your childhood. The preparation process is fairly quick, and it doesn't take long for the candy to set. However, you need to be extremely focused and careful, as hot caramel doesn't tolerate slowness. Choose any mold you like and pour the prepared syrup into it. The result will be candies that are not only delicious but also beautiful.

Prepare the silicone molds into which we'll pour our lollipops. Grease them with oil and then blot them with paper towels.
Place a thick-bottomed saucepan on the fire and pour sugar into it.
Add water to the saucepan.
Immediately add lemon juice or its substitute.
Gently stir the mixture so that the lemon juice is distributed evenly.
After heating, the syrup should boil and bubble.
Cook the caramel until it turns a light amber color. Then remove the syrup from the heat.
Let the syrup cool.
Pour the still warm syrup into molds.
You can also simply pour the caramel onto a Teflon mat and insert a stick into it.
After 20-30 minutes, you can remove the lollipops from the molds and mats. You'll now have delicious sugar candies that will be appreciated by both children and adults with a sweet tooth.
