There's a solution! Today we'll bake a stunning dietary brownie that's every bit as delicious as its "big brother." This keto-friendly brownie is made without a single gram of sugar or wheat flour, yet it turns out incredibly soft, fluffy, and airy.
I'd say this cake even surpasses a regular brownie in terms of flavor, as it's made with almond and hazelnut flour. The cake could easily be called not chocolate, but almond brownie, and everyone without exception will like it.

Combine softened butter with a sweetener. This could be erythritol, stevia, regular honey, or brown sugar. Add a pinch of salt for added flavor.
Add natural cocoa powder. Stir the mixture until smooth.
Separate the egg yolks from the whites. Add one yolk and two eggs with their whites to the cocoa mixture. Mix.
Add almond flour and hazelnut flour. If you don't have hazelnut flour, use just one type.
Add baking powder.
Knead a smooth, viscous dough. It's very fragrant.
Place the chocolate batter into a silicone baking pan. If you're using a different material, be sure to grease the bottom and sides with butter.
Bake in an oven preheated to 180 degrees for 20–25 minutes.
Remove the cake from the pan. It's ready!
Almond flour is a common ingredient in nutrition, but it's not easy to find on regular grocery store shelves. It's typically sold in hypermarkets, large, well-stocked marketplaces, and specialty stores, but the 24-hour supermarket around the corner might not have it. But don't worry! Making delicious and healthy flour at home is easy.
For 100 g of flour, you'll need 100 g of peeled almonds. If you buy shelled almonds, soak them first—this will make them easier to peel. Dry the almonds at 100 °C (212 °F) for about 10–15 minutes. Stir occasionally to prevent burning. In a blender, blend the almonds until finely ground, using several batches. Be careful not to overprocess them, as this will cause the almonds to release oils, otherwise, the flour won't work.
Any large particles can be sifted through a sieve. The flour is ready!
