The keto diet requires avoiding carbohydrates, but allows fats as a source of energy. So, avoid the classic sponge cake made with sugar, eggs, and wheat flour. However, savoiardi can be made with alternatives. Almond flour, rich in micronutrients and healthy fats, can be used. And replace sugar with erythritol.

Separate the whites and yolks. Immediately add the sifted almond flour to the yolks.
Combine the egg whites with erythritol. Whisk until stiff peaks form. The whites should hold their shape well, stick to the whisk, and not fall out of the bowl when you turn it upside down.
Combine the yolks with flour until smooth.
Add a third of the whites to the yolks and mix.
Add the yolk mixture to the remaining whites and combine until smooth.
Spoon the resulting batter into muffin tins. If desired, you can bake the mixture like classic savoiardi cookies on a baking sheet. However, muffin tins fill up faster.
Bake for 15 minutes at 180 degrees Celsius. However, the exact temperature may vary depending on your oven and the thickness of the Savoiardi. Use the crust color and thickness of the Savoiardi to determine if it's done.
