Our classic casserole recipe contains raisins, so we begin by soaking them in boiling water for about 10 minutes.
Place 600 grams of cottage cheese in a bowl and add 3 egg yolks. Separate the whites; we'll need them later.
Also add 3 tablespoons of sour cream (heaped), 3 tablespoons of sugar, a standard packet of vanilla sugar (8-10 grams) and 3 tablespoons of semolina.
Grind everything using an immersion blender until the mixture is completely homogeneous.
We take the raisins out of the water, remove excess moisture with paper towels and add them to the cheese mixture.
Mix the mixture with raisins so that the additive is evenly distributed in the dough (it is best to do this with a spatula).
Beat 3 egg whites with a mixer until fluffy and stable and add to the curd mixture in parts, mixing thoroughly until smooth.
Place the dough into a baking pan lined with parchment and greased with butter.
The finished casserole must be allowed to cool in the pan and only then removed.
When baked in the oven, the casserole will be fluffier than when ready. The dough will settle and thicken slightly as it cools, but that's okay. Our casserole will retain its tender texture, as it truly is the best classic "just like childhood" recipe.
The simplest decoration for an everyday casserole is a dusting of powdered sugar, but you can also decorate the entire casserole, like a cake, or each piece individually, just before serving.
This delicious, fluffy and tender casserole is made from cottage cheese and semolina.
