Our classic casserole recipe contains raisins, so we begin by soaking them in boiling water for about 10 minutes.

You can make your casserole without raisins or replace them with other fillings: chopped dried apricots, lemon or orange zest, toasted nuts, coconut flakes, etc.

Place 600 grams of cottage cheese in a bowl and add 3 egg yolks. Separate the whites; we'll need them later.

Also add 3 tablespoons of sour cream (heaped), 3 tablespoons of sugar, a standard packet of vanilla sugar (8-10 grams) and 3 tablespoons of semolina.

To ensure that the casserole turns out fluffy, tender, and airy, and that it doesn't absorb moisture or settle after cooling, it's best to make the dough with semolina rather than flour.
You can increase the amount of sugar if desired. We plan to serve the casserole with sweet toppings, so we're making it less cloyingly sweet.

Grind everything using an immersion blender until the mixture is completely homogeneous.

We take the raisins out of the water, remove excess moisture with paper towels and add them to the cheese mixture.

You can also add other additives to your taste at this stage. We used the zest of half a lemon.

The cottage cheese casserole with semolina is baked in the oven at 180℃ for 35-40 minutes in the “top + bottom” mode (without convection).
