I'm sharing a recipe for amazing, airy, and delicious muffins. The key feature of these baked goods is their vibrant lemon flavor and aroma. These muffins are very tender and soft, and they stay fresh for a long time. They can be enjoyed as a dessert with tea at home, or taken on the go as a delicious snack. Mixing the dough doesn't take much time or effort. So, first, preheat your oven to 180 degrees Celsius.

Break eggs (room temperature) into a deep bowl.
Add salt and beat with a mixer for one minute. A mixer is not necessary; the dough will form just as easily with a whisk.
Add sugar.
Grate the zest of one lemon. Only the yellow part will be grated, as the white part will be bitter.
Add to the dough. Mix.
Cut the lemon in half and squeeze the juice out of each half.
Pour in sunflower oil and stir.
In a separate bowl, mix flour, starch, soda and baking powder.
In two stages, sift the dry ingredients into the liquid mixture.
Stir.
Transfer the dough into the molds 2/3 full.
Cook at 180 degrees for 20-25 minutes.
Let the finished muffins cool and serve with tea!
