Let's start with a classic chocolate muffin recipe. This one doesn't require any additional ingredients. Homemade muffins made according to this recipe are airy, tender, and delicious. All the ingredients are readily available, and the preparation process doesn't require much time or effort.

Combine the dry ingredients. Sift the flour into a deep bowl.
Add salt and baking powder.
Add cocoa.
Add sugar.
Stir.
Melt the butter in a deep saucepan over low heat. You can also do this in the microwave.
Let the melted butter cool slightly. Add milk.
Add the eggs to the butter and milk mixture. Stir, no need to beat.
Combine the wet and dry mixtures. Knead the dough. It should be fairly runny and fall off a spoon easily. If not, thin it with a little milk (or cream).
Divide the batter among the muffin pans. Line them with paper liners or grease them with butter. Don't fill the pans completely, allowing for the muffins to rise.
