This is a very simple and quick kefir sponge cake recipe. It requires only the most readily available ingredients in the kitchen. This sponge cake is tender, soft, and moist. You can decorate it with icing and serve it immediately with tea, or use it to make a delicious cake.

Break the eggs into a deep bowl.
Start beating the eggs at medium speed with a mixer.
Add sugar in small portions and continue beating the mixture until fluffy.
Add kefir and beat the mixture until smooth.
Mix flour with baking powder and pour through a sieve into the egg-kefir mixture.
Mix everything carefully at low speed with a mixer until smooth.
Pour the dough into a pre-prepared form.
Bake the sponge cake at 190 degrees Celsius for 30-35 minutes. Check for doneness with a wooden skewer.
Leave the finished biscuit in the pan for 10 minutes, then take it out and let it cool completely.
