Step 1
Pour the milk into a heavy-bottomed saucepan and place over medium heat. Bring it almost to a boil, but do not let it boil.

In a deep container, mix sugar and 100 g of flour.

Pour hot milk into the resulting mixture and stir the mixture very quickly until smooth.

Let the custard base sit for 15-20 minutes to cool to room temperature. To speed up this process, you can place the container with the hot mixture in a bowl of cold water.
