We prepare all the necessary ingredients.
Pour the sugar into a saucepan and melt it until it becomes a rich amber caramel.
It is very important not to overburn the caramel, so that it does not become bitter.
Pour very hot milk into the hot caramel in small portions and stir gently.
Once all the milk has been added, place the saucepan over low heat and, stirring, bring the mixture to a smooth consistency.
Add honey and vegetable oil.
Add salt and spices and mix everything carefully. Let the mixture cool slightly.
Crack one egg into a separate bowl. Stir it lightly, then pour the cooled custard mixture into it through a sieve.
Mix everything thoroughly until smooth.
Mix flour with soda, baking powder and pour in small portions through a sieve into the spice mixture.
Knead the dough. It should be quite soft.
Roll out the dough.
We cut out gingerbread cookies of the required size and shape.
Bake the honey gingerbread for 10-12 minutes at 180 degrees.
Then we cool them on a wire rack.
Prepare the glaze. Place the sugar in a saucepan and add water. Bring the mixture to a boil, then simmer for 3-5 minutes. The syrup should reach 110 degrees Celsius.
Let the glaze cool slightly and pour it over the gingerbread.
Mix the gingerbread thoroughly so that the glaze is evenly distributed over their surface.
Serve the honey gingerbread cookies after the glaze has completely set.
