Classic vanilla gelato is a wonderful accompaniment to both cookies and tea. It's also a worthy dessert on its own. It's easy and simple to prepare, as any home cook has the necessary ingredients. Minimal ingredients, maximum flavor—this statement aptly applies to gelato as well.

Pour milk into a deep bowl, add cream and 125 grams of sugar.
Heat the mixture until fine bubbles appear. Remove from heat and add vanilla extract.
Combine the yolks and the remaining sugar. Beat until creamy.
Pour a little of the hot mixture into the yolks and beat for 1–2 minutes.
Pour the yolk mixture into the milk-cream mixture in a small stream, whisking continuously.
Heat the mixture over high heat to 85°C (175°F), stirring constantly. If you don't have a thermometer, keep an eye on the surface of the cream—it should bubble and become thick and viscous.
Let the mixture cool, place the saucepan with cream in cold water.
Transfer the cream to a freezer-safe container and place it in the freezer. After 1.5 hours, remove the ice cream and puree it with an immersion blender. Repeat this process 3-4 times over the course of 3 hours.
