Sift the flour into a deep container.
Add baking soda, ginger, cinnamon, and spice mix. Mix well.
Place softened butter in a separate container.
Add sugar.
Mix thoroughly with a mixer until a homogeneous mass is obtained.
When the butter and sugar have lightened in color, beat the egg into the mixture. Beat well again.
Pour in honey, slightly warmed in a water bath.
Gradually add the mixture of flour and spices.
At each stage, knead the dough thoroughly.
Sprinkle the table with flour. Place the dough on the surface.
Knead the dough thoroughly with your hands until you get a homogeneous, soft, elastic mass.
Wrap the dough in plastic wrap and refrigerate for at least a few hours. Ideally, let the dough rest for 8-12 hours. This will make it easier to work with and the cookies will be more flavorful.
Roll out the dough to a thickness of 3-4 mm.
Cut out the cookies to the desired shape, remove excess dough and place them on a baking sheet.
Bake at 180 degrees for 5-7 minutes until golden brown.
