Strawberry Mousse: A Simple Step-by-Step Recipe

It's easy and straightforward to prepare, but it does require some experience. Not everyone can do it right the first time.

It is believed that the French artist Henri de Toulouse-Lautrec, who was passionate not only about painting but also about cooking, invented mousse desserts. The first recipe called for dark or white chocolate as an essential ingredient.
In the 20th century, many chefs experimented with replacing familiar ingredients with the most unexpected products. This led to the emergence of fruit mousses, as well as a wide range of diverse recipes for making fluffy, foamy mixtures using berries (including strawberries).
Today we'll tell you how to make a delicious strawberry mousse dessert, and also offer several alternative options that are perfect as a filling for a sponge cake.

Soak 9 grams of gelatin in 40 ml of cold water and leave to swell for about 10 minutes.
Rinse fresh strawberries thoroughly under water and dry. Remove the leaves and stems from each berry. If the berries are large, cut them in half, as shown in the photo.
In a mixing bowl, combine strawberries, sugar, vanilla extract, and a few mint leaves (this will add a nice minty flavor to the strawberry mousse).
Blend the strawberries with an immersion blender until smooth. Use the highest speed setting to avoid any lumps.
Combine the mixture with gelatin heated to a liquid state and beat for another 2 minutes.
Add 100 grams of sour cream to give our delicate strawberry mousse the perfect creamy flavor. Mix the mixture at low speed until smooth.
Our mousse is ready! All that remains is to pour the dessert into glasses and place it in the refrigerator until the gelatin has completely set.
The chilled dessert can be further decorated:
- whipped cream;
- whipped egg whites;
- fresh strawberries;
- chocolate chips or shavings.
Please note that the gelatin recipe produces a very delicate and light mousse, but it will melt quickly at room temperature, so for a mousse cake, it's best to choose a thicker consistency. For example, you can prepare the berry filling for the cake:
- on whipped cream;
- with semolina (without cream or sour cream);
- on white chocolate and mascarpone cheese;
- with egg white;
