Wash the oranges thoroughly and remove the zest using a grater or vegetable peeler. Separate the pulp into segments, removing the seeds and membranes. You should be left with clean orange pulp.
Pour water into a heavy-bottomed saucepan and bring to a boil. Place the orange zest into the boiling water. Cook for no more than 15 seconds.
Place the zest in a sieve and submerge it in cold water. Bring to a boil again and strain. We won't need the water. Repeat this process at least three times until the water runs clear. This will remove any bitterness from the zest.
Place the orange zest and pulp in a clean, dry saucepan. Add sugar. Stir. Bring to a boil and simmer for 45 minutes. Then let cool, bring back to a boil, and simmer for another 45 minutes. Monitor the consistency of the jam. If it begins to thicken too soon, remove it from the heat. Remember to stir occasionally to prevent burning.
While still hot, transfer the finished jam into clean, sterilized jars and seal with steamed lids. This will keep the jam fresh longer, even without refrigeration.
