    2 kg
  • Sugar
    2 kg
  • Lemon
    1 pcs
  • Mint (sprig)
    1 pcs
  • Agar-agar
    1 tbsp
  • Water
    50 ml
Preparation

Step 1

Wash the cherries thoroughly and remove the pits. By the way, you can make jam cook both from the usual and from yellow cherries.

Step 2

Place the cherries in a heavy-bottomed saucepan. Heat gently to release the juices, then add 1 kg of sugar. Stir and bring to the boil.

Step 3

After the sugar has dissolved, add the remaining half of the sugar. The mixture should be thick and viscous. If the cherries are very juicy, you may need 200-500 grams more sugar.

Step 4

Grate the lemon zest. Then peel the lemon and cut the pulp into small pieces.

Step 5

Once the sugar has completely dissolved, add the lemon and zest. Mix thoroughly.

Step 6

Add mint. It will impart an unusual menthol aroma to the cherries.

Step 7

Bring the mixture to a boil and cook for 5-7 minutes.

Step 8

Add the agar-agar and stir. Place over heat and simmer for 3-4 minutes. The mixture will begin to foam vigorously, so be careful.

Step 9

Pour the jam into jars. If you're canning it for the winter, sterilize the lids. Done.

How to sterilize jars

First, choose glass jars with airtight lids. If you're using old jars, make sure they're free of cracks or chips. Wash them in hot, soapy water and dry thoroughly. Sterilize the jars using one of the methods listed below.

  • Oven. Preheat oven to 120 C. Place jars (upside down) and lids (separately) on the oven tray and keep in the oven for 20 minutes.
  • Stove. Place the jars and lids in a deep saucepan. Cover with cold water. Bring the water to a boil over high heat, reduce the heat to medium, and simmer for 10 minutes. Line a baking sheet with paper towels. Carefully remove the jars from the water and let them dry.
  • Dishwasher. Place the jars, lids, and rubber seals in the dishwasher on the hottest cycle. After the time has elapsed, remove and place them on a tray lined with paper towels. Allow them to air dry or dry them with a paper towel.
