Peel and core the apples, then weigh them. Cut them into cubes, place them in a bowl, and add 3-4 tablespoons of sugar per serving, based on the total amount.
Add the zest of half an orange and squeeze out the juice, which we set aside for later use.
Place the sugar and water in a saucepan and turn the heat to medium. Stir until the sugar is completely dissolved.
Carefully pour the apples into the syrup and add the orange juice, straining it through a sieve to remove the seeds. Cook for 50 minutes over moderate heat, stirring occasionally to ensure the apples are evenly heated.
Add the blended walnuts and mix well. Bring to a boil and simmer for 15 minutes.
The apple and walnut jam is ready. Pour into sterilized jars and seal with heat-treated lids. Turn them over, wrap them up, and let them cool, then store them in the pantry for the winter.
