Peel the washed pears, cut into small cubes and sprinkle with vanilla sugar.
Mix the Zhelfix with beet sugar until smooth. Place the fruit in a saucepan, pour in the juice, and stir. Cook, maintaining a simmer for 3 minutes over low heat. Skim off any foam that forms on the surface to prevent it from darkening the liquid.
The apple and small pear jam is ready. Pour it hot into sterilized jars and seal. Turn them periodically as the jelly sets.
