Puff pastry envelopes with cottage cheese

  • Egg yolk

  • Milk
    1 tbsp
  • Flour

Preparation

Step 1

In a bowl with high sides, mix the cottage cheese, eggs, sugar with a pinch of salt until you get a smooth, soft cream without lumps.

Step 2

Dust a work surface with flour and turn the dough out onto it. Remove the plastic wrap and immediately cut into squares of approximately equal size. You should get 10 to 12 pieces per batch.

Step 3

Lightly flatten each square individually with a rolling pin and place 1 tablespoon of filling in the center. Pull two corners of the square toward the center and pinch with your fingertips to secure.

Step 4

Once ready, place the envelopes on a parchment-lined baking sheet. Then beat the yolk with milk and brush the surface of the dough with the resulting liquid.

Step 5

Bake in a preheated oven at 180°C for 20-25 minutes. Let the envelopes cool completely and dust with powdered sugar ground in a coffee grinder.

Step 6

The puff pastry cottage cheese envelopes are ready. Serve them with delicious tea, compote, or coffee.

Is puff pastry worth buying?
This is actually quite a difficult question. On the one hand, it's incredibly convenient: just grab some ready-made dough and whip up a dessert in a few minutes. Especially since puff pastry is sold literally everywhere at fairly low prices.

But if you want to know exactly what you're eating and eat only healthy foods, it's best to learn how to cook your own. It's not as difficult as it might seem at first glance.

What to add to the filling?
In my opinion, cottage cheese doesn't pair well with chocolate, and chopped nuts can ruin the delicate, smooth texture of the filling. However, it pairs wonderfully with fruit ingredients. You can mix in classic additions like dried fruit: dried apricots, raisins, and candied peel. Small pieces of apple, banana, and fresh berries would also be appropriate.

I always try to keep some puff pastry in the fridge in case of unexpected guests. It's so nice to see their surprised faces when I greet them with still-warm pastries. Give it a try.
