If you have extra puff pastry in the freezer, take it out ahead of time. Work only with completely thawed dough to ensure it doesn't break and rolls out evenly. If it sticks to your hands or surfaces, simply dust it with flour.

In a bowl with high sides, mix the cottage cheese, eggs, sugar with a pinch of salt until you get a smooth, soft cream without lumps.
Dust a work surface with flour and turn the dough out onto it. Remove the plastic wrap and immediately cut into squares of approximately equal size. You should get 10 to 12 pieces per batch.
Lightly flatten each square individually with a rolling pin and place 1 tablespoon of filling in the center. Pull two corners of the square toward the center and pinch with your fingertips to secure.
Once ready, place the envelopes on a parchment-lined baking sheet. Then beat the yolk with milk and brush the surface of the dough with the resulting liquid.
Bake in a preheated oven at 180°C for 20-25 minutes. Let the envelopes cool completely and dust with powdered sugar ground in a coffee grinder.
