Sift 250 grams of wheat flour, 50 grams of sugar, a pinch of salt, and a teaspoon of baking powder into a mixing bowl. Mix all dry ingredients thoroughly.
Add 1 teaspoon of fresh lemon zest to the dry ingredients.
Add 120 grams of softened butter to the mixture. It's best to remove the butter from the refrigerator ahead of time and let it soften.
Rub the butter and flour thoroughly.
As a result, you should get a crumbly, buttery crumb, as in the photo.
Divide the dough into three parts. Set one part aside on a separate plate (we'll need these crumbs for the final dusting of the royal vatrushka).
Pour the remaining 2/3 of the crumb mixture into a baking pan, lining the bottom with parchment paper. There's no need to grease the sides, as the crumb mixture is quite greasy and will easily come off after baking.
In a container, pour 350 grams of cottage cheese, 50 grams of regular sugar, 10 grams (1 packet) of vanilla sugar, 50 grams of sour cream and 1 egg (use both the white and the yolk).
Beat everything with an immersion blender until a homogeneous mass is formed.
Transfer the curd mixture into the pan and smooth it out so that it covers the entire dough. You can do this with a spatula or a simple spoon.
Cover the top of the curd filling with the remaining crumbs, carefully forming the top layer.
The exact baking time depends on your oven's features and available settings. Typically, to determine the optimal baking time, you should bake in a Royal Oven at least once, carefully observing the cake's progress after 40 minutes.
Cook until slightly convex and nicely browned, as in the photo.
Once the royal cheesecake has cooled completely, remove the pan and transfer our homemade classic cheesecake to a beautiful serving dish.
Our royal cheesecake is already a beautiful dish on its own, but the recipe calls for a delicious sauce, which can be made by simply mixing a little sour cream with condensed milk in a 50:50 ratio.
