Step 1

First, weigh out the sour cream. Place a colander in a bowl and cover it with cheesecloth folded in four layers.

Insert a wooden spatula into the knot and place it in a large bowl, keeping the sour cream suspended and below the bottom. Refrigerate the knot for at least 6 hours, draining the whey periodically.

Beat the cold sour cream at low speed with a mixer, gradually increasing the speed.

Sift powdered sugar into the mixture and continue mixing everything.

When the sour cream begins to thicken, stop whisking.
