Prepare the ingredients. Remove the dough from the freezer and defrost at room temperature. Wash and core the strawberries.
Dust a work surface with flour and roll out the dough until it's approximately double in size. While rolling, try not to press down on the edges. Otherwise, the dough may not flake properly.
Using a sharp knife, cut the dough into equal triangles. It's important to use a well-sharpened knife. Many home cooks recommend using a pizza cutter—it's convenient and does the job perfectly.
Place 1-2 whole strawberries on the base of the triangle. Roll into a tight croissant.
Line a baking sheet with parchment paper and place the croissants on it. Space the croissants apart, as they will expand during baking.
Crack an egg into a deep bowl, whisk, and brush each croissant with the egg wash using a silicone brush. This will give the pastries a beautiful golden color. Sprinkle with a small amount of sugar. Leave the croissants to rise in a warm place for 10-15 minutes.
Place in the oven for 15-20 minutes at 180 degrees.
Let the finished baked goods cool, sprinkle with powdered sugar and serve.
