Cut the apples into small wedges. For this recipe, we use small apples, such as the Ranetki variety, as they're easier to fill into croissants.
Melt the butter in the microwave. Add the sliced apples directly into the melted butter.
Chop the walnuts. Walnuts, apples, and cinnamon are a classic combination. However, you can use pecans, peanuts, almonds, or other nuts if you prefer.
Dust the work surface with flour. Lay out the puff pastry. Cut the sheet in half and roll it out to a thickness of 0.2–0.3 cm.
Sprinkle the rolled-out dough with sugar. You can substitute white sugar for brown sugar. It will help the apples adhere to the dough more tightly.
Sprinkle the dough with nuts.
Cinnamon. I recommend sprinkling the cinnamon over the leaves using a fine-mesh sieve—this will help distribute the spice more evenly.
Cut out triangles from the dough.
Place the apples on the base of the croissant. You can use several small slices at a time.
We roll up the rolls.
Line a baking sheet with parchment paper. Place the croissants on it. Brush them with egg yolk.
Place in the oven for 15 minutes at 190 degrees.
