It is better to use wooden sticks, since on completely smooth plastic sticks the candy may not hold well, become loose and fall off before the child has time to eat it.

In a saucepan or saucepan with a thick bottom, mix 150 grams of sugar, 40 grams of natural honey and 25 grams of water.

Boil the caramel for approximately 5-7 minutes until it acquires a beautiful amber color and reaches a temperature of 150-155℃.

If you're working without a thermometer, check for the caramel's readiness by "crackling." Scoop a small amount of caramel onto a wooden skewer and drop it into a glass of cold water. If you hear a distinctive crackling sound, the caramel is ready. The caramel ball should also become firm after cooling. If the mixture remains pliable and stretchy, the syrup hasn't yet reached the desired temperature. Cook for a couple more minutes and repeat the test.

Once you've formed a solid ball or the mixture has reached a temperature of 150°C, remove the saucepan from the heat and let the large bubbles settle. Now you're ready to pour the honey lollipops.

The simplest recipe is to make round honey candies using wooden sticks and a silicone mat with markings, as shown in the photo. The silicone mat doesn't require additional lubrication, meaning our candies won't have an oily flavor, which isn't everyone's cup of tea.

If you want to pour the mixture into metal molds, they must be additionally greased with a thin layer of vegetable oil so that the finished lollipop can be easily removed after cooling.

Important! Do not coat lollipops on parchment paper intended for baking in the oven! Even with generous grease, the coating will stick to the parchment and leave fibers on the surface of the candies, which will ruin their clarity.

If you want to make multi-colored candies, simply add a little water-soluble food coloring to the finished mixture and mix thoroughly until the color is uniform.

The recipe can be supplemented with other ingredients:

  • crushed nuts (walnuts, hazelnuts, etc.);
  • dried apricots or raisins;
  • with multi-colored confectionery sprinkles (nonpareil).

Homemade cough drops can be made with mint, sage, menthol, or eucalyptus. Honey lozenges with grated ginger root and lemon juice are also helpful.
