Lemonade "Duchess"
The taste of Duchess soda is familiar to many from childhood. Even today, the drink can be found on store shelves, but it's far from the same pear lemonade. Modern manufacturers add flavorings and colorings to the soda. Perhaps the only solution is to make this iconic lemonade yourself.

Quarter the pears, core them, and chop them into small, random pieces. You can use any pear, but Williams has a very pleasant, sweet flavor. Place the pears in a blender and puree.
Squeeze the juice from half a lemon and add it to the pear puree.
Add sugar.
Once again, blend everything thoroughly.
Next, use a sieve or cheesecloth to separate the resulting mass. This yields approximately 150-200 ml of concentrated juice and 200 g of pulp.
Pour boiling water over the pulp. Mix well and wait until the mixture cools completely.
After the pulp has cooled, rub it through a sieve again.
Pour the juice into a convenient container and dilute it with cold sparkling water. If for some reason you don't like carbonation, you can add plain cold drinking water. Mix well and add ice if desired. Pear lemonade is ready.
How to choose pears for lemonade
The key to a successful Duchess lemonade is juicy pears. Generally, this garden fruit isn't known for its high juice content; it's quite dense and dry. However, there are varieties that can produce sweet juice. These include:

- "Buttery Summer"
The recipe uses the Williams pear variety, the most famous. The small, rosy-sided fruits have juicy, sweet, melt-in-your-mouth flesh. Williams pears are used to make alcoholic schnapps.
