To maximize the flavor and aroma of citrus fruits in lemonade, be sure to freeze them first. For the drink, you can grate or mince them.
Freezing removes the bitterness from the zest, and crushing helps extract more juice from the pulp.
If you still want to juice a fresh citrus fruit, use one at room temperature. To maximize the juice yield, roll it on a flat, hard surface or soak it in hot water for a couple of minutes.
How much sugar do you need for 1 liter of lemonade?
The sweetness of your lemonade depends entirely on your taste preferences. If you prefer sweet lemonade, use 150 g of sugar per 1 liter of lemonade. If you prefer a more intense citrus flavor, use 100–120 g of sugar per 1 liter of juice.
In principle, even after adding sweetener, you can adjust the sweetness of the drink. If the lemonade seems too sweet, add a little water to the pitcher until the taste is to your liking. Stir the lemonade thoroughly after each additional glass of water.
If the drink turns out sour, also dilute it with water or, conversely, sweeten it a little more.
